Ingredients
- (4) boneless skinless chicken breasts
- 1/3 cup Italian style bread crumbs
- 1/4-cup olive oil
- 1-cup of finely chopped onions
- (2) finely chopped cloves of garlic
- (1) 28 – 32 ounce of your favorite spaghetti sauce
- 2 tsp sugar
- 3 tbsp Italian seasoning
- 1/3-cup Parmesan cheese
- 1 beaten egg
- 1/2 cup of shredded mozzarella cheese
- Noodles of your choice
- Wax paper
Instructions
- Heat 2 tbsp of olive oil in a saucepan, add onions and garlic
- Stir; add the spaghetti sauce, sugar and Italian seasoning
- Heat to boiling. Reduce heat and simmer; stirring occasionally
- Flatten the boneless skinless chicken breasts between 2 sheets of wax paper
- Beat the egg in a bowl.
- In another bowl combine the Italian breadcrumbs and Parmesan cheese
- Dip the chicken into the egg, then into the breadcrumb mixture
- In a large skillet heat the remaining olive oil, add the breaded chicken and cook for 10-15 minutes, turning only once; until the center of the chicken is white
- Move the cooked skillet chicken to the sauce pan filled with the tomato sauce mixture
- Sprinkle with mozzarella cheese, cover and melt the cheese
- Serve over noodles of your choice
