Skillet Chicken Parmesan

Chicken Parmesan INgredients

  4 Servings    

Ingredients and amounts:

  • (4) boneless skinless chicken breasts
  • 1/3 cup Italian style bread crumbs
  • 1/4-cup olive oil
  • 1-cup of finely chopped onions
  • (2) finely chopped cloves of garlic
  • (1) 28 - 32 ounce of your favorite spaghetti sauce
  • 2 tsp sugar
  • 3 tbsp Italian seasoning
  • 1/3-cup Parmesan cheese
  • 1 beaten egg
  • 1/2 cup of shredded mozzarella cheese
  • Noodles of your choice
  • Wax paper

Cooking Instructions:

  • Heat 2 tbsp of olive oil in a saucepan, add onions and garlic
  • Stir; add the spaghetti sauce, sugar and Italian seasoning
  • Heat to boiling.  Reduce heat and simmer; stirring occasionally
  • Flatten the boneless skinless chicken breasts between 2 sheets of wax paper
  • Beat the egg in a bowl.  In another bowl combine the Italian breadcrumbs and Parmesan cheese
  • Dip the chicken into the egg, then into the breadcrumb mixture
  • In a large skillet heat the remaining olive oil, add the breaded chicken and cook for 10-15 minutes, turning only once; until the center of the chicken is white
  • Move the cooked skillet chicken to the sauce pan filled with the tomato sauce mixture
  • Sprinkle with mozzarella cheese, cover and melt the cheese
  • Serve over noodles of your choice
